These Easy Potato Wedges Are My New Favorite Side Dish

Not to be dramatic, but I truly can't imagine a world without potatoes. From mashed to tater-totted, there is hardly an iteration of potatoes that doesn't light my fire. My only qualm with potatoes, though, is that they often take a long time to cook due to their density and high starch content. This extended cooking time, paired with my busy schedule, has led me to search for new potato recipes that require as little hassle as possible, and luckily, TikTok has (yet again) answered my potato prayers. This easy recipe, shared by TikTok user @nutrientmatters, makes potato wedges that are crunchy on the outside and fluffy on the inside with hardly any work on the chef's end. Easily made in the oven or air fryer, these potatoes are even more delectable when dipped in the honey mustard sauce shared in @nutrientmatters's video.

Easy Potato Wedges

Ingredients

  1. 6-8 yellow potatoes
    3-4 tablespoons avocado oil
    1 teaspoon garlic powder
    1/2 teaspoon dried oregano
    1/2 teaspoon dried red pepper flakes
    1/2 teaspoon dried parsley
    Salt and pepper to taste
  1. Dipping Sauce:
    1/3 cup mayonnaise
    1 tablespoon yellow mustard
    1 tablespoon honey
    1 tablespoon lemon juice
    1 teaspoon dried parsley
    Salt and pepper to taste

Directions

  1. Clean potatoes and cut lengthwise into quarters, then cut the quarters in half.
  2. Bring a medium pot of water to boil, then add the raw potato wedges.
  3. Parboil the potato wedges for 8-10 minutes, then drain.
  4. While the potatoes are boiling, combine oil and seasonings in a small bowl and set them aside.
  5. Heat the oven to 425°F.
  6. Coat the partially boiled potato wedges with the seasoned oil, then place on a baking sheet or air-fryer tray, skin side down.
  7. Place the tray in the oven for 45-55 minutes, or until the potato wedges are crispy and golden brown.
  8. While the potatoes are baking, combine the ingredients for the dipping sauce in a small ramekin.
  9. When the potatoes are done, remove them from the heat and serve immediately alongside the dipping sauce.
