Overnight apple and bacon french toast casserole is one of the best breakfast recipes that I’ve made. The tart sweetness of the apple with the savory salty bits of bacon are the perfect sweet and savory flavor combination.

This bacon french toast casserole I get asked to make over and over again. It is not only a hit with the adults but kids love the addition of bacon too.

Mornings can be hectic when it comes to breakfast. Especially Christmas morning when everyone is opening up presents and enjoying time together do you really want to have to cook? In my family we love to make some overnight casseroles that we can just pop in the oven. Usually it’s a hash brown casserole or this cranberry orange french toast casserole but this year we are going to make this overnight apple and bacon french toast casserole.

Which Bread is Best to Use for French Toast

There are many breads that work great for french toast but I prefer brioche. Brioche is a soft bread I am not a fan when my french toast is too crunchy. It is made with more eggs and butter than most bread which gives it a rich flavor. Some people like to make their french toast in whole slices but for a casserole I like to cube the bread into bite size pieces. One loaf should be more than enough to fill your 13×9 baking pan. 

Other breads that work well for french toast are white, challah, french bread and even sour dough. I also love using croissants in an overnight french toast. Check out this apple croissant french toast casserole.

Apple and Bacon French Toast Casserole Ingredients

  • Brioche– Cubed brioche is my favorite bread to use but challah or white bread also work well.
  • Apples– Honey crisp apples are always my preference they are the best apples for baking. Chop your apples into small bite size pieces.
  • Bacon– Cooked and Chopped. I love using maple bacon for this recipe.
  • Eggs– Use large eggs.
  • Milk– It’s always better to bake with a milk that has a higher fat content. Whole milk is preferred but I made this with 1% milk.
  • Vanilla Extract– Imitation vanilla also works too.
  • Brown Sugar– I prefer the flavor of light brown sugar over dark brown sugar.
  • Cinnamon
  • Salt
  • Confectioner’s sugar or maple syrup (optional)

French Toast Casserole Topping

  • Brown Sugar– Use light brown sugar
  • Granulated Sugar
  • Cold Butter– Make sure butter is cold and not at room temperature.
  • Cinnamon

How to Make Overnight Apple Bacon French Toast Casserole

Grease a 13×9 inch baking dish. Cut Brioche bread into bite size pieces and layer in the baking dish. In a medium sized bowl combine eggs, milk, vanilla, brown sugar, cinnamon and salt.

Add apples and bacon to your baking dish of cubed brioche. Pour the egg mixture over the bread apples and bacon. Cover and store in the fridge overnight or at least for 30 minutes.

The next morning take the baking dish out of the fridge and let it sit on the counter for about 20-30 minutes. You don’t want to put a cold glass dish in the oven it can shatter.

Preheat oven to 350 degrees F.

For the topping combine brown sugar, granulated sugar and cinnamon. Cut in cold butter. Sprinkle topping over your french toast. Bake for 40 minutes at 350 degrees F. Top with confectioner’s sugar or maple syrup when served. Enjoy!

Ingredients

  • 1 Loaf of Brioche Bread Cubed
  • 6 Eggs
  • 2-3 Apples diced
  • 8-10 pieces of Bacon Cooked and Crumbled
  • 2 Cups of Milk
  • 1 tbsp of Vanilla Extract
  • 3 tbsp of Light Brown Sugar

  • 1 tsp of Cinnamon
  • 1/2 tsp of Salt
  • Confectioner's sugar or maple syrup (optional)
  • Topping
  • 4 tbsp of Brown Sugar
  • 2 tbsp of Granulated Sugar
  • 2 tbsp of Cold Butter
  • 1/2 tbsp of Cinnamon

Instructions

  1. Grease a 13x9 inch pan.
  2. Cube Brioche bread into bite size pieces and layer in the greased baking dish.
  3. Combine eggs, milk, vanilla, brown sugar, cinnamon and salt.
  4. Add diced apples and bacon to your baking dish of cubed brioche bread.
  5. Pour egg mixture over cubed bread, apples and bacon.
  6. Cover and store in the fridge overnight.
  7. In the morning take the pan out of the fridge and let it sit on the counter for about 20-30 minutes. You don't want to put a cold pyrex in the oven it can shatter.
  8. Preheat oven to 350 degrees
  9. For the topping combine brown sugar, granulated sugar and cinnamon. Cut in cold butter.
  10. Sprinkle topping over your french toast.
  11. Bake for 40 minutes at 350 degrees.
  12. Top with confectioner's sugar or maple syrup when served.

Notes

Make sure to not put the pan in the oven too cold.
