One Pan Smothered Chicken Breasts Recipe

Chicken breasts are delicious no matter how they are cooked, but putting cheese on a chicken breast is the winning flavor in my eyes. When I found this amazing recipe by Простой рецепт on Youtube, I knew I had to make it right away. This recipe also stretches your ingredients to feed more people because the chicken breasts are sliced really thinly and flattened out. The tops of the chicken breasts are covered in a delicious salad mixture and then baked with an extra layer of cheese.

Ingredients:

Chicken & Seasoning:

  • 2 chicken breasts (sliced thinly lengthwise and pounded with a meat hammer to flatten out)
  • Salt (to taste)
  • Pepper (to taste)
  • 1 teaspoon of paprika
  • 2 teaspoons dried herbs

Chicken Topping:

  • 1 onion (thinly sliced)
  • 1 tomato (chopped)
  • 1/4 cup greens (spinach or kale would be good, whatever you have will work)
  • 3 hard-boiled eggs (grated)
  • 1/2 to 1 cup cheddar cheese (grated)
  • 1 to 2 cloves of garlic
  • Salt (to taste)
  • Pepper (to taste)
  • 1 tablespoon of Mayonaise (or sour cream will also work)

Directions:

First, you will cut your chicken breasts lengthwise into thin flat sections, then pound them with a meat stick to flatten them out more, then season well. Then, you will make your chicken topping by adding your chopped greens, sliced onion, chopped tomato, grated hard-boiled eggs, grated cheese, crushed garlic, salt, and pepper to a bowl and mixing well.

Then, you will place your seasoned chicken breasts on a greased baking sheet and add the topping and some extra grated cheese, then bake at 350 degrees for 20 to 30 minutes and serve.
