Apple Pie Mini Bites with Warm Caramel Sauce

Cook's Notes: I used a biscuit cutter 3-1/2 inches in diameter. I would not suggest going smaller as too difficult to get filling in and then folding over crust.  A glass or jar mouth would work also for cutting dough circles.

If using a prepared refrigerated pie crust will need both crusts. The recipe makes 12 mini pies. 

  • 2 cups Granny Smith apples peeled and chopped (roughly 2 apples)
  • 2 tablespoons butter
  • 1/4 cup brown sugar
  • 2 tablespoons flour
  • 1 teaspoon Saigon cinnamon or 2 teaspoons ground cinnamon
  • 1/4 teaspoon apple pie spice
  • 1/4 teaspoon salt
  • 2- 9 inch pie crusts 
  • 1 egg mixed with 1 teaspoon water
  • 1/4 cup sugar
  • 1 tablespoon cinnamon
  • Prepared Caramel Sauce
  • Combine chopped apples, butter, brown sugar, flour, cinnamon salt and 1 teaspoon water. On medium heat cook the apple mixture, allow to thicken and the apples to soften. Only add more water if gets too thick. 
  • Remove from heat and allow to cool to room temperature before placing on dough circle. 
  • Preheat the oven to 375 degrees and line a baking sheet with parchment paper. 
  • Roll pie crust to 1/8th of an inch over a lightly floured surface and a 3-1/2 inch circle cookie cutter or biscuit cutter cut out circles.
  • Place circles on a parchment-lined baking sheet.
  • Spoon out a heaping teaspoon of apple pie filling on one side of the pie crust circles. 
  • Fold over the pie crust to cover the pie filling and form half moon-like circles.
  • Using a fork press the edges together, sealing the pie filling inside.
  • in a small bowl whisk the egg and teaspoon of water.
  • Brush over the pie bites.
  • In a small bowl combine the sugar and cinnamon and sprinkle over top of the pie bites. Place baking sheet in the freezer for 5 minutes. 

  • Remove baking sheet from freezer and bake for 18 to 20 minutes or until crust is golden brown and crispy.
  • Cool for 5 to 10 minutes
